Are You Being Injured By Food?
Food isn’t the nice guy it pretends to be: pizza burns, jalapeno hands, a popcorn shattered tooth, brain freeze, or dreaded coffee-crotch which waits to scald unsuspecting private parts. My mother-in-law was attacked by food she thought was dead when our 18 pound frozen Thanksgiving turkey cleverly slipped out of the freezer breaking her foot. Foods’ dark side was laid bare when Dr. Henry J. Heimlich exposed foods’ propensity to choke an unsuspecting diner to death mid gulp. As bad as all these are, what I actually want to share is a very provocative study by Colin Campbell PhD. entitled The China Study. It’s the most comprehensive study of nutrition ever conducted! David Klein, publisher/editor of Living Nutrition Magazine, calls The China Study “the most important book on nutrition and health to come out in the last 75 years… it should be the model for all nutrition programs taught at universities…the science is conclusive.” The premise: What if there was a chemical that activated cancer in 100% of test animals, and when that same chemical was eliminated from their diet, the cancer disappeared? And what if that chemical was a food we all love…namely protein?

Protein is a vital component of our bodies. We are made of hundreds of thousands of different kinds of protein, composed of innumerable combinations of amino acids. Protein makes life possible. When we think of protein we think of fried chicken, a grilled ribeye, a double cheeseburger, you know, meat. The ideal protein would be one that is closest to us biochemically. The most perfect dinner therefore, would be having Bob for lunch. No, I am not advocating cannibalism, just making a point. We associate protein with animals, birds, fish, and milk products. All very much NOT like us. Consequently we are paying with our health.
The China Study explores, and comes to some amazing conclusions as to why we have 17 times more heart disease, diabetes and cancer than poor Chinese peasants. Why American women with breast cancer die in five times greater number than Chinese women. Why people who eat the most animal-based foods get the most chronic diseases. Why casein, the protein which makes up 87% of milk, promoted all stages of the cancer process. Why children who ate the highest protein diets were the ones most likely to get liver cancer. How exposure to carcinogens can be neutralized by reducing protein intake. And why the safest and most biochemically perfect protein comes not from animals…or grilling your next-door neighbor, but from plants. A pattern was beginning to emerge from the data: nutrients from animal-based foods increased tumor development while nutrients from plant-based foods decreased tumor development. The attention we pay to fat and cholesterol in our diet is misguided. It is the consumption of animal protein that does us in. Yet animal protein has remained in the shadows while saturated fat and cholesterol have taken the brunt of criticism.
The most spectacular results in the treatment of heart disease were reported by Dr. Caldwell Esselstyn, past director of cardiology at the prestigious Cleveland Clinic. Eighteen patients with severe coronary disease, who collectively experienced a total of 49 coronary events including angina, bypass surgery, heart attacks and strokes, were told to avoid oils, meat, fish, foul, and dairy products. They existed exclusively on a plant-based diet. Their beginning cholesterol level was 246mg/dl dropping to 132 after the first few months of eating plants only. In the following 11 years, there was exactly ONE coronary event among the 18 patients. This patient cheated on the diet for two years. His angina (chest pain) returned, he repented and was symptom-free thereafter. The 18 patients were treated without drugs, relying only on the plant-based diet. The result: Forty-nine coronary events prior to a plant-based diet and zero events for those who changed their eating habits. There are not separate, disease-specific diets for heart disease, rheumatoid arthritis, diabetes, and cancer. All disease responds equally well to a no-meat, plant-based diet.
